Breakfast food is a pretty big deal in my house. Matt and I are definitely brunch people on the weekends and love making a big breakfast. Unfortunately during the weekdays we don’t usually have time to make breakfast. But I have the perfect recipe that will never leave you hungry during the weekday rush to work! Baked Egg Turkey Cups are super easy to make, good for you and delicious! You can even meal prep by making these in bulk to eat throughout the week.
While I used to turkey to make ours, you can use any kind of meat (ham, bacon, turkey bacon). Once we’re settled in Kodiak I want to try making these in turkey bacon and regular bacon for my husband.
12 slices of turkey
Toppings of choice
Preheat oven to 400 degrees
Spray 12-cup muffin tin with Olive Oil cooking spray
Place 1 slice of turkey or meat of choice in each muffin tin
Crack egg right on top of the tukey
Place toppings if desired! I sprinkled cheese this time but vegetables are also a yummy and healthy addition.
