Have I told you guys lately how much I love fall? I mean I really love summer, but I just love the change of season and the start of something new. Since summer normally means 18 hours days for where we live in Alaska, fall seems to symbolize being able to slow down. In the summer I feel like we constantly have to be on-the-go when the weather is nice. But after a busy summer and a ton of traveling, I’m ready to settle back into our schedule and relax.
With the cooler weather that fall brings, it also makes me crave warm comfort foods even more. I LOVE my crockpot. I mean, anything that I can dump ingredients into and it creates a magical goodness while I do nothing is a friend of mine. While I crave comfort foods, I don’t crave the extra calories and fat that comes with it. Which is why I’m so excited to share my recipe for crockpot chicken tacos!
This recipe tastes just as delicious as the chicken tacos you can get from your local mexican restaurant, minus the grease. Say whattttt!?! All the flavor without the fat? Life. Is. Good.
This recipe is amazingly simple as well. All you’ll need is:
1lb Chicken Breast
1 can Rotel Tomatoes
1 ¼ cups of Chicken Broth
1 packet of Taco Seasoning
Place chicken in the bottom of your crockpot. Mix rotel, chicken broth and taco seasoning in a bowl together before dumping in crockpot on top of chicken. Cook on low for 4-6 hours.
A few hours in (when chicken is mostly cooked through) I like to shred the chicken. You can wait until it’s done cooking but I think the seasoning soaks more into the chicken this way.
The best thing about a crockpot is when it’s done it’ll switch to the warm setting. Meaning it stays warm but stops cooking. So you can eat it when you’re ready on your own time.
When you’re ready for dinner, place chicken on taco shells or tortillas, add favorite toppings and enjoy!
