This recipe is made with a buttery crust of NILLA Wafers. Ever since I was a little girl, NILLA Wafers always reminded me of summer desserts. The fact that they can make an easy no bake dessert taste so decadent, makes them a favorite base to my no bake desserts.

Have I mentioned how easy this recipe is to make? Your guests will never guess that you can make this recipe in less than 15 minutes.

First, add your cream cheese to a bowl with lime juice. I like to squeeze the lime juice from key limes. You can also use regular lime juice. Then add key lime zest to taste. I add at least a tsp, but you can do more or less depending on your taste. Mix all together with a hand mixer.

Place your bowl of key lime cheesecake mix in the refrigerator to chill while you make the crust.

Easy No Bake Key Lime Pie In a Jar

While your center cools, it’s time to make your crust! Gather your NILLA wafers, you can use either a food processor or just a large zip lock bag and a rolling pin – like I did. Once your NILLA Wafers are crushed, add them to a bowl with your melted butter. Mix together.

Spoon your crust into the bottom of your mason jars. Pack tightly. Add your key lime cheesecake center on top of the trust. Tops with crumble of crust, whipped cream, key lime slice and a NILLA Wafer.

No Bake Key Lime Pie In a Jar

Ingredients

  • 1/2 cup Nilla Wafers crushed
  • 3 tbsp Butter melted
  • 1 block Cream Cheese 8 oz, softened
  • 3 tbsp Lime Juice
  • 1 tsp Lime Zest
  • Whipped Topping Dolop

Instructions

  1. Add softened cream cheese, lime juice and lime zest to a bowl. Mix until well combined with a hand mixer. 

  2. Place mixture in refrigerator to chill while you make the crust. 

  3. Add 1/2 cup of crushed Nilla Wafers and 3 tbsp of Butter to a bowl and mix until well combined. 

  4. Pack mixture to bottom of jars to create the crust. 

  5. Take key lime mixture from refrigerator and add on top of crust.  

  6. Add crumbs from Nilla Wafer mixture 

  7. Top with dollop of whipped topping

  8. Place finished Mini Key Lime Pie in a Jar in refrigerator to chill. These are best after chilled for 30 minutes, but can be eaten immediately!
