Our morning routine in my house can be pretty hectic and my daughter wakes up HANGRY. Normally the first thing she says when I get her out of her crib is, “eat eat eat”. And my girl does not like to wait on her food. Since she’s almost two and tantrums are a daily occurrence, I’ve learned that in order to avoid a def-con 5 meltdown before 7AM, that I need to have breakfast ready to go when she wakes up.

I’ve started making these super easy breakfast cookies ahead of time, in order to have breakfast ready for my girl – no matter how early she decides to wake up. These cookies are delicious and full of peanut butter, Honey Bunches of Oats with Almonds and banana. She’s getting the nutrients I need for her to get, with the taste that she loves. Plus I can tell her she’s eating cookies for breakfast and she’s super excited. Mom Win!

Now for this super easy and fun recipe! This is one that I can promise your whole family will love. The peanut butter pairs perfectly with the crunchy goodness of Honey Bunches of Oats with Almonds.

Ingredients:

  • 1 cup of Honey Bunches of Oats with Almonds

  • 1/2 cup of Rolled Oats

  • 2 ripe bananas, mashed

  • 1/2 tsp vanilla extract

  • 1 tbsp of honey

  • 1/2 cup of peanut butter

This recipe will make about a dozen cookies. Since there is no dough in this recipe they will not spread out on the pan while baking. So you can fit all 12 on your pan, painlessly.

Recipe:

  • Preheat over to 360

  • Spray cookie pan with cooking oil

  • Mash Bananas

  • Combine all ingredients in bowl and mix well together

  • Spoon into cookie size on pan

  • Heat in over for 15 minutes

Let the cookies cool for 5 minutes after taking them out of the oven. Then enjoy this peanut buttery goodness while playing the Post Nintendo Switch National Sweepstakes.
