4 Easy No Bake Truffle Recipes for Your Next Holiday Party

These little creamy balls of delectable goodness are always a crowd pleaser. I bet you can’t eat just one!   I just stocked up on some of my favorite pantry items at the Stock Up Sale at Safeway. I was able to stock-up on Chips Ahoy Chocolate Chip Cookies, Fruity Pebbles Post Cereal, Betty Crocker Super Moist White Cake Mix, and Barnums Animal Snack Crackers. All of these products can be used to make no bake truffles, meaning I will always be prepared with a dessert in hand whenever I need a dessert last minute. I’ve totally been that person at the party who showed up with the store bought dessert, but the Stock Up Sale at Safeway has me thinking ahead with all the dessert possibilities I can make while saving money this holiday season. I love shopping at my local Safeway for any and all of our family grocery needs. I’m always impressed with their selection and their prices! I purchased these products and more at my local Safeway, but you can also stock up and save at any of the Albertsons Companies family of stores including Albertsons, ACME Markets, Jewel-Osco, Vons, Pavilions, Randalls, Tom Thumb, Shaw’s, Star Market, and Carrs/Safeway. Visit the Safeway website to find a store near you and discover some fun meal prep tips and recipe ideas! No bake truffles are always easy to make. With only two or three ingredients and NOT having to be baked, this dessert is right up my ally. I’m a busy Mom, so I don’t have the time to spend all day in my kitchen – I have a little toddler who will not allow it. But I can carve out about 30 minutes, which is all I will need to make any of these recipes and trick anyone who tastes these no bake truffles into thinking they are way more complicated and time consuming than they really are. Cookie Dough Truffles If you’re not keeping a box of Chip’s Ahoy Chocolate Chip Cookies on hand, then you need to start now. Luckily you can grab a box (or several) at your local Safeway during the Stock Up Sale! All you need for this recipe is a block of cream cheese, a bag of Chip’s Ahoy Chocolate Chip Cookies and bakers chocolate. You can use a food processor to crush the chocolate chip cookies, or just put them in a gallon bag and use a rolling pin to break apart the cookies. Add crushed cookies to a bowl with cream cheese and mix until well combined. Roll into one inch balls and place on baking sheet. Place baking sheet in the freezer for 15-20 minutes. This will harden the balls so that you can easily cover them in chocolate. Once balls have chilled, melt your bakers chocolate and cover balls. Place on parchment paper to dry. Top with sprinkles, if you wish! Rainbow Truffles The Rainbow Truffle recipe was hands down my daughters favorite. I’m thinking this will make a reappearance at her birthday party in November! Add Fruity Pebbles and cream cheese to a bowl and mix until well combined. Roll into one inch balls and place into freezer for 15-20 minutes. Use a fork to dip balls into white bakers chocolate. Place on parchment paper to allow chocolate to harden and top with Fruity Pebbles. S’mores Truffles This recipe has all the taste of a s’mores rolled into one mouthwatering truffle! For this recipe, you can use a food processor or gallon bag and rolling pin to break up the animal crackers. Melt butter and marshmallows and then combine animals crackers. Mix until well combined. Form one inch balls and place on baking sheet in the freezer for 15 to 20 minutes. Melt bakers chocolate and use a fork to dip balls into the chocolate. Place balls on parchment paper to allow chocolate to harden. Sugar Cookie Truffles Combine Betty Crocker Super Moist White Cake Mix with melted butter. Stir until well combined. I like to spray my hands with non-stick cooking spray and then roll into one inch balls. Place the balls on a baking sheet and put in the freezer for 15 to 20 minutes.   After you take the balls out of the freezer, melt your white baker’s chocolate and dip balls into white chocolate. Forget watching TV, take a family walk, go on a trip to the park or just play in your backyard as a family.  Our good weather days will soon become very few and far between. Our winters are full of rain, so we like to take advantage of the sunshine when we can. We love to go on family walks, which always include Riley!  Hiking has become a favorite family activity. On the more challenging hikes, I’m not always able to bring my daughter – but I ALWAYS bring my dog. Over the past 28 days, Riley has been my constant companion on our many hikes and walks. Low Carb & Gluten Free Protein Chocolate Donuts with Vanilla Protein Icing

These Protein Chocolate Donuts are made with a vanilla protein icing and are Gluten Free, contain no refined sugar and are low carb. Did I mention that they’re absolutely delicious? The best part is these Chocolate Protein Donuts contain only 65 calories, 2g of fat, 3g of carbs and 5g of protein per donut! You cannot beat that.  I try to eat a high protein and low carb diet for the most part. But your girl MISSES donuts. My Mom has always loved Krispy Kreme Donuts – and whenever she would visit me in college we’d have to visit the local Krispy Kreme. It was always our “thing” to do together. Even though I’m living thousands of miles away from my Mom and hundreds of miles away from a Krispy Kreme, I still get the craving for a delicious circle of goodness.  Even though I still crave a donut, my lifestyle and diet does not. At least not until I put together this recipe that fits into my macros and is gluten free.  I’ve seen so many recipes that call for sugar substitutes or bananas. I love bananas and like to save the banana I eat each day for a protein shake or to a smoothie bowl. I used Orgain Protein for this recipe. Orgain is a plant based protein that is naturally sweet. Orgain Chocolate Protein mixed with unsweetened cocoa makes these chocolate donuts taste sweet without any added sugar.  These Protein Chocolate Donuts are made by mixing coconut flour, chocolate protein powder, unsweetened almond milk (I used vanilla), 2 egg whites, unsweetened applesauce. Coconut flour is naturally very dense and dry, so your mixture may seem drier than a usual. If your mix is dry, that’s okay! I kind of had to pack the mix into the baking pan, but it bakes perfectly. Since the mix is not oat based, it does not rise, so be generous with your servings.  Once the donuts have baked, allow them to cool. While the donuts are cooling mix together your icing. The icing is simple to make and only two ingredients. Use half a scoop of vanilla protein powder and mix unsweetened vanilla almond milk until you’ve reached your desired consistency.  Of course, once you ice your donuts, you can add sprinkles! These Chocolate Chip Pumpkin Protein Muffins taste like fall, without all the guilt. There’s been a crispness in the air lately and our days are quickly getting shorter. In Alaska, we’re losing 6 minutes of daylight a day until the Winter Solstice. It’s hard to believe that our last Summer in Kodiak is quickly coming to an end. As much as I hate to see the Summer leave, I’m excited for Fall, cooler temps and alllllllllllllll the pumpkin flavored things! The crisp air has put me in the mood for baking. I follow a gluten-free, low dairy, high protein and low carb diet. Since my diet is more restrictive, this normally means that I avoid foods like muffins. But my Chocolate Chip Pumpkin Protein Muffins are the exception, while also following all the rules.  These Chocolate Chip Pumpkin Protein Muffins are easy to make, low carb, gluten free and refined sugar free. Each muffin contains 5g of Carbs, 3g of Fat, 10g of Protein and only 89 calories per large muffin. These muffins will pair perfectly with your morning (or afternoon!) coffee – or even one of the 7 Skinny Fall Flavored Coffee Recipes you can find in this post.  These muffins taste of pumpkin spice and chocolate chips, without the guilt. Can you believe that these Chocolate Chip Pumpkin Protein Muffins contain less than a gram of sugar per muffin? I’ve been trying to cut sugar from my diet, so these are able to satisfy my sweet tooth while sticking to my diet.  I used Orgain Organic Vanilla Protein Powder as the base and add coconut powder, egg white, pumpkin, ground ginger, nutmeg, cinnamon, baking soda and swerve. Mix until well combined. Once combined add sugar free chocolate chips. 4 Easy No Bake Truffle Recipes for Your Next Holiday Party

These little creamy balls of delectable goodness are always a crowd pleaser. I bet you can’t eat just one!   I just stocked up on some of my favorite pantry items at the Stock Up Sale at Safeway. I was able to stock-up on Chips Ahoy Chocolate Chip Cookies, Fruity Pebbles Post Cereal, Betty Crocker Super Moist White Cake Mix, and Barnums Animal Snack Crackers. All of these products can be used to make no bake truffles, meaning I will always be prepared with a dessert in hand whenever I need a dessert last minute. I’ve totally been that person at the party who showed up with the store bought dessert, but the Stock Up Sale at Safeway has me thinking ahead with all the dessert possibilities I can make while saving money this holiday season. I love shopping at my local Safeway for any and all of our family grocery needs. I’m always impressed with their selection and their prices! I purchased these products and more at my local Safeway, but you can also stock up and save at any of the Albertsons Companies family of stores including Albertsons, ACME Markets, Jewel-Osco, Vons, Pavilions, Randalls, Tom Thumb, Shaw’s, Star Market, and Carrs/Safeway. Visit the Safeway website to find a store near you and discover some fun meal prep tips and recipe ideas! No bake truffles are always easy to make. With only two or three ingredients and NOT having to be baked, this dessert is right up my ally. I’m a busy Mom, so I don’t have the time to spend all day in my kitchen – I have a little toddler who will not allow it. But I can carve out about 30 minutes, which is all I will need to make any of these recipes and trick anyone who tastes these no bake truffles into thinking they are way more complicated and time consuming than they really are. Cookie Dough Truffles If you’re not keeping a box of Chip’s Ahoy Chocolate Chip Cookies on hand, then you need to start now. Luckily you can grab a box (or several) at your local Safeway during the Stock Up Sale! All you need for this recipe is a block of cream cheese, a bag of Chip’s Ahoy Chocolate Chip Cookies and bakers chocolate. You can use a food processor to crush the chocolate chip cookies, or just put them in a gallon bag and use a rolling pin to break apart the cookies. Add crushed cookies to a bowl with cream cheese and mix until well combined. Roll into one inch balls and place on baking sheet. Place baking sheet in the freezer for 15-20 minutes. This will harden the balls so that you can easily cover them in chocolate. Once balls have chilled, melt your bakers chocolate and cover balls. Place on parchment paper to dry. Top with sprinkles, if you wish! Rainbow Truffles The Rainbow Truffle recipe was hands down my daughters favorite. I’m thinking this will make a reappearance at her birthday party in November! Add Fruity Pebbles and cream cheese to a bowl and mix until well combined. Roll into one inch balls and place into freezer for 15-20 minutes. Use a fork to dip balls into white bakers chocolate. Place on parchment paper to allow chocolate to harden and top with Fruity Pebbles. S’mores Truffles This recipe has all the taste of a s’mores rolled into one mouthwatering truffle! For this recipe, you can use a food processor or gallon bag and rolling pin to break up the animal crackers. Melt butter and marshmallows and then combine animals crackers. Mix until well combined. Form one inch balls and place on baking sheet in the freezer for 15 to 20 minutes. Melt bakers chocolate and use a fork to dip balls into the chocolate. Place balls on parchment paper to allow chocolate to harden. Sugar Cookie Truffles Combine Betty Crocker Super Moist White Cake Mix with melted butter. Stir until well combined. I like to spray my hands with non-stick cooking spray and then roll into one inch balls. Place the balls on a baking sheet and put in the freezer for 15 to 20 minutes.   After you take the balls out of the freezer, melt your white baker’s chocolate and dip balls into white chocolate. Forget watching TV, take a family walk, go on a trip to the park or just play in your backyard as a family.  Our good weather days will soon become very few and far between. Our winters are full of rain, so we like to take advantage of the sunshine when we can. We love to go on family walks, which always include Riley!  Hiking has become a favorite family activity. On the more challenging hikes, I’m not always able to bring my daughter – but I ALWAYS bring my dog. Over the past 28 days, Riley has been my constant companion on our many hikes and walks. These Protein Chocolate Donuts are made with a vanilla protein icing and are Gluten Free, contain no refined sugar and are low carb. Did I mention that they’re absolutely delicious? The best part is these Chocolate Protein Donuts contain only 65 calories, 2g of fat, 3g of carbs and 5g of protein per donut! You cannot beat that.  I try to eat a high protein and low carb diet for the most part. But your girl MISSES donuts. My Mom has always loved Krispy Kreme Donuts – and whenever she would visit me in college we’d have to visit the local Krispy Kreme. It was always our “thing” to do together. Even though I’m living thousands of miles away from my Mom and hundreds of miles away from a Krispy Kreme, I still get the craving for a delicious circle of goodness.  Even though I still crave a donut, my lifestyle and diet does not. At least not until I put together this recipe that fits into my macros and is gluten free.  I’ve seen so many recipes that call for sugar substitutes or bananas. I love bananas and like to save the banana I eat each day for a protein shake or to a smoothie bowl. I used Orgain Protein for this recipe. Orgain is a plant based protein that is naturally sweet. Orgain Chocolate Protein mixed with unsweetened cocoa makes these chocolate donuts taste sweet without any added sugar.  These Protein Chocolate Donuts are made by mixing coconut flour, chocolate protein powder, unsweetened almond milk (I used vanilla), 2 egg whites, unsweetened applesauce. Coconut flour is naturally very dense and dry, so your mixture may seem drier than a usual. If your mix is dry, that’s okay! I kind of had to pack the mix into the baking pan, but it bakes perfectly. Since the mix is not oat based, it does not rise, so be generous with your servings.  Once the donuts have baked, allow them to cool. While the donuts are cooling mix together your icing. The icing is simple to make and only two ingredients. Use half a scoop of vanilla protein powder and mix unsweetened vanilla almond milk until you’ve reached your desired consistency.  Of course, once you ice your donuts, you can add sprinkles!
