Life has been absolutely insane lately. I can’t believe February is already almost over! I feel like life has been in fast forward lately and I’m dying for it to just slow down a little bit.
If you read my post on When You Want to Give Your Child a Sibling, But Can’t – then you know I’ve had fertility issues. I’ve started doing systemic enzyme therapy and I have about a month left. I’m crossing my fingers and praying this helps clear my blocked Fallopian tube or we’ll have no choice but to put having another baby on hold until we move and are able to do IVF. I don’t think I’ve been this excited/nervous about something since I found out I was pregnant with Madison.
While I’m going through these fertility treatments, I’m trying to give my body the best possible diet as possible. I already eat a gluten-free diet, but I’m tried to cut a lot of carbs, sugar and processed foods. Butttt let’s be real, I LOVE SWEETS. So this recipe is a healthy-ish twist on my all-time favorite chocolate chip cookies.
This recipe for gluten free chocolate chip cookies is ONLY three ingredients, gluten free and so easy to make! All you need to make these bad boys is gluten-free oats, ripe bananas and dark chocolate chips. These cookies are sweet enough to satisfy my sweet tooth, while not leaving me feeling like I just ruined my diet.
All you need to do is mash your ripe bananas and mix with the gluten-free oats and dark chocolate chips. Then place on a cookie sheet and bake.
These come right out of the oven smelling sooooo good. I’m even eating some as I type this!
2 Ripe Bananas
1 Cup of Gluten Free Oats
1/2 Cup of Dark Chocolate Chips
Preheat oven to 360 degrees
Mash ripe bananas

Use spoon to scoop cookies into small balls on cookie sheet
