Yesterday I was really craving chocolate chip muffins, so I threw these babies together in my Ninja blender. If you’ve never used a blender before to mix ingredients I highly recommend you trying ASAP. If you’re like me, I’m always looking for the most efficient and quick way to do things. Blending the ingredients in my blender mixes the ingredients perfectly and takes less than 30 seconds.
The muffins texture is a little different. They are a little springy but still very yummy!These are also super moist due to the greek yogurt. I’m currently obsessed with dark chocolate chips so I used those in half of the muffins and blueberries in the other half.
The greek yogurt adds tons of protein while the oats add fiber.
My husband, who believes that healthy food is gross food, even approved!
2 Large Ripe Bananas
2 tbsp honey
2 cups of Oats (quick cooking or old fashioned)
½ tsp Baking Soda
½ tsp vanilla extract
1 cup Greek Yogurt, plain
Preheat oven to 400 degrees
Lightly grease a 12-cup muffin tin. I used muffin liners and lightly sprayed these.
Place all ingredients in blender and blend until batter is smooth.
Divide batter among muffin cups.
Sprinkle with additional toppings or stir toppings into batter
