Low Carb & Gluten Free Chocolate Chip Pumpkin Protein Muffins

These Chocolate Chip Pumpkin Protein Muffins taste like fall, without all the guilt. There’s been a crispness in the air lately and our days are quickly getting shorter. In Alaska, we’re losing 6 minutes of daylight a day until the Winter Solstice. It’s hard to believe that our last Summer in Kodiak is quickly coming to an end. As much as I hate to see the Summer leave, I’m excited for Fall, cooler temps and alllllllllllllll the pumpkin flavored things!

Gluten Free and Low Carb Chocolate Chip Pumpkin Protein Muffins

The crisp air has put me in the mood for baking. I follow a gluten-free, low dairy, high protein and low carb diet. Since my diet is more restrictive, this normally means that I avoid foods like muffins. But my Chocolate Chip Pumpkin Protein Muffins are the exception, while also following all the rules.

These muffins taste of pumpkin spice and chocolate chips, without the guilt. Can you believe that these Chocolate Chip Pumpkin Protein Muffins contain less than a gram of sugar per muffin? I’ve been trying to cut sugar from my diet, so these are able to satisfy my sweet tooth while sticking to my diet.

I used Orgain Organic Vanilla Protein Powder as the base and add coconut powder, egg white, pumpkin, ground ginger, nutmeg, cinnamon, baking soda and swerve. Mix until well combined. Once combined add sugar free chocolate chips. Add to muffin tin and bake for 15 minutes at 350 degrees.
