I LOVE granola. My favorite breakfast or post-workout meal is a smoothie bowl (like any of these post-workout smoothie bowls) sprinkled with granola. But my stomach can’t handle gluten and store bought granola is LOADED with sugar. So what’s a girl to do? You make your own.

Paleo Gluten Free Low Carb Granola

Believe it or not, making your own granola is pretty easy. You can easily customize it to include the flavors you love while still being aware of the ingredients that are going into your food.

This recipe includes no oats and is completely paleo and gluten-free friendly. It’s full of healthy fats, protein and fiber. I love the extra crunch that I get with this granola! This granola recipe allows me to enjoy my favorite breakfast, guilt-free!

Paleo Gluten Free Low Carb Granola

Like I said, this recipe is pretty easy. You combine unsweetened shredded coconut, walnuts, sliced almonds, pumpkin seeds, chia seeds, flax seed meal, hemp seed, ground cinnamon and ground ginger in a bowl. Mix until well combined. Add vanilla extract and coconut oil. Mix well.

Paleo Gluten Free No Carb Granola

Place parchment paper on top of a baking pan. Spread granola mix evenly. Bake for 12 minutes at 350 degrees.

Remove from oven, break apart and flip granola. Place back in the oven for an additional 8-10 minutes.

Allow granola to cool before sprinkling on your favorite yogurt or smoothie bowls!

Ingredients

  • 3/4 Cup Unsweetened Shredded Coconut
  • 2 Cup Sliced Almond Raw
  • 1 1/2 Cup Walnuts
  • 1 Cup Pumpkin Seeds
  • 1/3 Cup Chia Seeds
  • 1 TBSP Flax Seed Meal
  • 2 TBSP Hemp Seed
  • 2 TSP Ground Ginger
  • 3 TBSP Ground Cinnamon
  • 1/4 Cup Coconut Oil
  • 1 TSP Vanilla Extract

Instructions

  1. Preheat Oven to 350 degrees

  2. Combine Shredded Coconut, almonds, walnuts, pumpkin seeds, chia seeds, flax seed meal, hemp seed, ground ginger and ground cinnamon in a bowl. 

  3. Stir until well combined. 

  4. Add Coconut Oil and Vanilla Extract. 

  5. Stir until well combined. 


  6. Place parchment paper onto a baking sheet. Spread granola on top. Bake for 12 minutes.

  7. Break up granola and flip. 

  8. Bake an additional 8-10 minutes.
