Skinny Jalapeno Pimento Cheese Recipe

I grew up in North Carolina where pimento cheese is a delicacy. The creamy goodness of cheese and pimentos tastes so much better in the south. Now that we’re living in Alaska I’ve learned that if I want to eat my favorite southern foods, I have to cook them myself.

Normally pimento cheese is made with mayonnaise, but I prefer to make a skinnier version. Even though this recipe has fewer calories and fat, it has added spice with jalapenos and cayenne pepper. Like I mentioned it’s super easy to make and super hard to put down. All you need for this recipe is plain greek yogurt, sharp cheddar cheese, colby jack cheese, diced jalapenos, pimentos and cayenne pepper.

All you have to do is add your ingredients to a bowl and mix well.

Once you’ve combined and mixed all pimento cheese ingredients, your skinny jalapeno pimento cheese is ready to eat! But for the best taste, I’d recommend chilling in the refrigerator for at least 30 minutes.

    Ingredients

    • 1 Cup Plain Greek Yogurt
    • 2 Cups Shredded Sharp Cheddar Cheese
    • 1 Cup Shredded Colby Jack Cheese
    • 4 oz Pimentos
    • 1/4 Cup Jalapenos Diced
    • Dash Cayenne Pepper

    Instructions

    1. Add all ingredients to bowl and mix well until combined

    2. For the best results, refrigerate for at least 30 minutes after combining.

    3. Spread on crackers, celery or your favorite bread and enjoy!
